My First Vegan Thanksgiving

During the past few days, I have been sharing reasons to be thankful and reasons why I am so thankful and grateful.  I would like to wish each and every IBOer and their families a very warm, enjoyable, and happy Thanksgiving.  
This year, Thanksgiving was a little different for me.  In September of this year, I transitioned to a vegan plant based lifestyle.  This meant that my household would undergo a new tradition and no longer have the traditional turkey or chicken, but to have a meatless option.  Begin vegan means that I no longer consume animal products including meat, dairy, and eggs.  In the two months that I have been eating in this manner, I have experienced so much energy, I feel good all the time, my hair and nails are going through a growth spurt, I have restful sleep, and I am losing weight and inches.
This is definitely a lifestyle so I made sure to start planning for Thanksgiving about a month ago to ensure that it was still a very festive day with some great food to eat.  I am happy to report that my first Vegan Thanksgiving was a true success.  I made a vegan chocolate cake topped with CocoWhip non-dairy topping with chopped walnuts.  It was so yummy.  I also made a vegan stuffing that turned out to be the favorite of the day.  The meatless option that replaced the traditional turkey was a veggie roast that I surrounded with roasted vegetables.  All of the food together made for a very enjoyable and tasty Thanksgiving.  I'm very thankful that I was able to prepare a vegan meal that everyone enjoyed and didn't even know it was vegan.  Have a great day and Happy Thanksgiving!
